So about a year and a half ago, I discovered that I love pistachios and had been depriving myself of yet another delicacy my entire life. Something about pistachios just doesn’t give off an I’m gonna taste good vibe. I think it’s because when I was little… well, I mean even now… so yeah, my whole life I’ve been addicted to sunflower seeds, and when I was little I remember one day my grandma was eating pumpkin seeds. And because they were the same brand as the sunflower seeds and I was already hip to the amazingness of sunflower seeds, I was like, you know what… I would like to try a pumpkin seed.

And I can remember the pumpkin seed being so extremely mid, but because I felt like I was supposed to like them more than I actually did, I ate some more… patiently waiting for my palette to become sophisticated enough to appreciate them, but it never happened. They’re not nasty, but it’s just like, why am I wasting my time eating this? 🌚 BUT if I were in a situation where the world was ending or there was some sort of apocalypse and food was sparse, and I just so happened to stumble upon a pack of pumpkin seeds, I would be THRILLED!!

Anyway, I brought up pumpkin seeds because I put them in the same category as pistachios… like random nut… seed… same thing that might be a letdown, so I’ll probably just steer clear. Obviously, I’ve since overcome that fear and am happy to say that I now see pistachios for who they truly are on the inside. And shortly after I initially made this discovery, I started making pistachio everything—pistachio lattes, pistachio butter, pistachio oats—and omg I had a spumoni cake from Publix because I had like a half-off bar cake coupon for my half-birthday and said, I’m gonna try something new, and that was the something new, and it was so good!!

I’m actually gonna do a spumoni Ninja Creami recipe eventually, but I need to master the layering technique without the recipe being 500 steps. I’m so off track. Um, season = fall, fall = Gilmore Girls, Gilmore Girls = coffee at Luke’s, coffee at Luke’s = latte (not really) deep breath fall also equals Halloween, Halloween = witch, witch = green, green = pistachios, pistachios = LOML, LOML = imaginary relationship in my head, my head = the place where these recipes are made, recipes being made = high protein/healthyish. NOW ~ PEMDAS ~ AND YOU GET WITCH’S BREW PROTEIN ICE CREAM, WHICH IS PISTACHIO-FLAVORED PROTEIN ICE CREAM, WHICH YOU’RE GONNA LOVE, SO LET’S GET INTO THE RECIPE!! 🧙🔮🧹☕️

Why You’ll Love This Witch’s Brew Protein Ice Cream

Here’s why this recipe is officially spellbook-worthy:

  • Festive but different: It’s not pumpkin, it’s not apple — it’s pistachio latte vibes in Halloween form.
  • High protein: One pint is packed with protein thanks to the vanilla protein powder, so you’re getting your seasonal treat and hitting your goals.
  • Espresso kick: A little caffeine never hurt anybody, and it pairs beautifully with the nutty pistachio flavor.
  • Customizable color: Add green food coloring for that bright cauldron effect, or keep it natural for a more subtle potion vibe.
  • Fun topping: Halloween sprinkles = instant aesthetic win for parties, movie nights, or just you eating it on the couch in your coziest blanket.

Ingredients You’ll Need

Here’s the full breakdown, divided into the base and toppings so it’s easy to follow.

Ice Cream Base

  • 1 ½ cups (360 mL) 2% milk – creamy but not heavy.
  • 1 scoop (31 g) vanilla protein powder – use your favorite brand.
  • 14 g sugar-free pistachio pudding mix – the key to that nutty, creamy flavor.
  • 1 tsp espresso powder – or 2 tsp if you want a stronger coffee kick.
  • 1 tsp vanilla extract – adds depth.
  • ⅛ tsp almond extract – don’t skip this, it’s small but mighty.
  • 1 tsp stevia or sweetener of choice – to taste.
  • Pinch of salt – balances sweetness.
  • (Optional) 6 drops green food coloring – for that real cauldron green.

Mix-Ins / Toppings

How to Make Witch’s Brew Protein Ice Cream

Blend the base:

Add all the ice cream base ingredients to a blender. Blend until smooth and fully combined.

Freeze:

Pour the mixture into a Ninja Creami pint. Freeze on a level surface for 24 hours.

Spin:

Remove from the freezer. Rinse the outside of the pint under hot water for 1–2 minutes. Spin on Light Ice Cream mode. Re-spin 1–2 times until smooth and creamy.

Mix-in magic:

Create a well in the middle (if there isn’t one already). Add most of your Halloween sprinkles, reserving a few for the top. Spin on Mix-In mode.

Finish & serve:

Top with the remaining sprinkles and enjoy!

Tips for Success

  • Don’t skip the almond extract. It might seem tiny, but it really rounds out the pistachio flavor.
  • Food coloring is optional. The pudding mix will give you a subtle green hue, but if you want that dramatic witchy look, the drops of food coloring make all the difference.
  • Freeze level. Make sure your pint is perfectly level in the freezer — uneven freezing can be bad for your machine.
  • Extra caffeine: Double the espresso powder if you want more coffee flavor.

Customization Ideas

This recipe is already fun, but you can definitely play with it to make it your own.

  • Sweetener swaps: Monk fruit, allulose, erythritol — whatever you like works here.
  • Caffeine-free: Skip the espresso powder if you want this more pistachio-forward and kid-friendly.
  • Dairy-free: Use almond milk or oat milk and a dairy-free protein powder for a vegan option.
  • Extra crunch: Add crushed pistachios as a mix-in along with the sprinkles.
  • Spooky drizzle: Top with sugar-free chocolate syrup or melted white chocolate to add a little drama.

Seasonal Vibes & Why It Works for Halloween

Halloween recipes can feel repetitive (pumpkin everything, pumpkin everywhere). Witch’s Brew shakes things up while still leaning into the spooky aesthetic. The pistachio + espresso combo is cozy and indulgent, but the green color and sprinkles make it a showstopper.

It’s the kind of dessert you could serve at a Halloween movie night or just enjoy solo while watching Hocus Pocus for the 100th time. And let’s be real — if anyone asks why your ice cream is green, you being able say, “It’s Witch’s Brew.”, is worth it on its own.

FAQ

Can I make this without food coloring?

Yes! The pudding mix gives a light green tint on its own, but the food coloring makes it pop for Halloween.

Do I have to use espresso powder?

Nope — you can leave it out if you want a pure pistachio flavor or swap in instant coffee for a milder taste.

Can I add extra protein without using powder?

Not really — protein powder is key here for both texture and nutrition. Greek yogurt or cottage cheese could technically work, but with this recipe, the flavor may not be the same.

Can I make this ahead of time?

Yes! Once spun, you can refreeze. Just note that you may need another spin to refresh the texture.

What protein powder works best?

Vanilla whey isolate usually gives the creamiest results, but plant-based protein works too if you adjust liquid slightly.
