SNAP CRACKLE POP RICE KRISPIES! 😀

— unrelated but the crack in Christmas crack triggered the relation in my head, my apologies.

But anyway, yall… may I vent?

Great because I was going to do it anyway.

So all of the Christmas recipes that I have for you guys, I made MONTHS ago! I was very prepared for the season, and then about a month and some change ago, before I was able to get them out, my stupid laptop broke 😭.

The crazy thing is… it isn’t even fully broke. It just refuses to recognize my correct password despite all of my attempts to correct the issue.

I’m trying to give her (yes, my laptop) grace because she is 11 years old, but I feel like she has another 11 years to give bare minimum, so idk. Maybe I need to knock some sense into her… give her a little shake perhaps. OR do I let her die in peace… idk idk 😣.

Anyway…

While she’s been having her mid life crisis, I’ve been over here dying myself because I couldn’t get these recipes posted and blah blah blah.

So already, long story cut short, I figured out a way to do it. Not perfectly, and taking 50x longer to do than it normally would, but good enough from my phone — and I finally got one posted yesterday.

And now here I am, laying in my bed typing this at 5:27 AM on 12/22/25, desperate to get at least 3 more Christmas recipes out before Christmas.

Obviously cutting it super close for anyone to even be able to enjoy them for the holidays at this point, but I figured that if anything, I can consider it a super head start on next year. So I might as well continue to break my neck to get them out now.

Am I required to talk about the ice cream now?

Because guess what? I did not grow up with my mom making Christmas crack every year. In fact… I’ve never even had it LMAO.

But fear not bc what I have had my whole life is a brain. A brain that enables me to know how to replicate the exact essence of this holiday favorite into a healthy enough Ninja Creami recipe.

I also plan on making Christmas crack cookies on Christmas Day, if anyone cares. Not healthy… actually healthy… healthy for the soul if you will!

But it’s just funny that I’m making Christmas crack things without having ever made Christmas crack. Like I’m just choosing to skip to the expert level without experiencing the basics.

But for the cookies, I’m torn between actually making Christmas crack and mixing it into the dough OR just adding Christmas crack mix-ins to the dough — the toffee, the saltines, the chocolate… the x, the y, the z, just all separated.

DECISIONS… and I’m horrible at decisions!

Also can’t decide if I want to use kettle cooked potato chips instead of saltines to lean slightly into the kitchen sink cookie realm.

All this debating is so deep for me that I wouldn’t be surprised if I ended up making no cookies at all because of the pressure I’m putting on myself to make the best possible decision that’ll result in maximum enjoyment!!

Okay I’m way off track per usual…

It’s 6:10 AM rn if anyone is curious. I did take a break to brush my teeth though.

Ummmmm, ice cream!

I can’t believe I’ve typed all these words without mentioning the full name of the ice cream LMAO.

Say it with me:

Christmas Crack Protein Ice Cream.

Christmas Crack Protein Ice Cream.

Christmas Crack Protein Ice Cream.

NOW 3X FAST 🫵!

This recipe is very delicious, it’s sweet, salty, crunchy, creamy, everything that you would hope and dream for it to be!! Trust me, I would never let you down!

And of course we all know it’s high protein yada yada borrinnngggggg. I’m sure you wouldn’t even be here if you were under the impression that it was not, but I’ll still continue to throw that in there for sh*ts and gigs.

Am I allowed to say that? Honestly yall, I don’t even cuss in real life lmao. BUT there are certain sayings/scenarios that require a curse word because there’s no good substitute. Like it just wouldn’t sound right without it, and I feel like it doesn’t count as cussing in those moments. You literally had no choice but to use that word in that moment.

Likeeeeeeee what else were you supposed to say?!

Alright, I feel like I’m giving cracked out — like the ice cream — at this point with the way I’m rambling.

So at last…

LETS GET INTO THE RECIPE!

Why You’ll Love This Recipe

  • High-protein but still fun – This isn’t a “sad protein dessert.” It’s creamy, rich, and genuinely dessert-like.
  • Perfect sweet + salty balance – Saltine crackers and toffee give that addictive contrast Christmas crack is known for.
  • Festive without being complicated – Red and green M&Ms, sprinkles, and chocolate make it holiday-ready fast.
  • Great last-minute holiday recipe – No baking, no candy thermometer, no stress.
  • Customizable – You can swap toppings based on what you already have in the pantry.

Ingredients

Ice Cream Base

  • 1 ½ cups (360 milliliters) 2% milk
  • 1 scoop vanilla protein powder (31 grams)
  • 14 grams sugar-free white chocolate pudding mix
  • 1 teaspoon vanilla extract
  • 1 teaspoon stevia or sweetener of choice, to taste
  • Pinch of salt

Mix-Ins

  • 5 saltine crackers
  • 15 grams toffee bits

Chocolate Shell

  • 21 grams semi-sweet chocolate chips
  • ½ teaspoon coconut oil

Toppings

  • 6 red and green M&Ms (chopped or whole)
  • 2 grams Christmas sprinkles (about ½ teaspoon)
  • 2 grams chopped white chocolate (about 4 white chocolate chips)

How to Make Christmas Crack Protein Ice Cream

1. Blend the Ice Cream Base

Add all of the ice cream base ingredients — milk, vanilla protein powder, white chocolate pudding mix, vanilla extract, sweetener, and salt — to a blender. Blend until completely smooth and fully combined.

2. Freeze

Pour the mixture into a Ninja Creami pint and place it on a level surface in the freezer. Freeze for 24 hours.

3. Spin the Ice Cream

After freezing, remove the pint from the freezer and rinse it under hot water on all sides, including the bottom, for 1–2 minutes.

Place the pint into the Ninja Creami and spin on Light Ice Cream mode. Re-spin 1–2 times, or until the texture is smooth and creamy.

4. Add the Mix-Ins

If there isn’t already a well in the center, create one using a spoon. Add all 5 saltine crackers and all of the toffee bits into the center.

Spin once on Mix-In mode.

5. Prepare the Chocolate Shell

While the ice cream rests in the freezer, add the semi-sweet chocolate chips and coconut oil to a microwave-safe dish.

Microwave in 15-second intervals, stirring in between, until fully melted and smooth.

6. Finish & Decorate

Remove the ice cream from the freezer and pour the chocolate shell over the top.

Immediately sprinkle on the chopped M&Ms, Christmas sprinkles, and chopped white chocolate while the shell is still wet so everything sticks.

Let the shell set for a minute or two, then enjoy.

Tips & Tricks

  • Don’t overdo the mix-ins – Too many crackers can make the texture crumbly instead of creamy.
  • Chop toppings finely – Smaller pieces distribute better and look cleaner.
  • Re-spin if needed – If the base feels crumbly after mixing, one quick re-spin fixes it.
  • Freeze briefly before serving – A 5-minute chill after decorating helps the shell set perfectly.

Customization Ideas

  • Make it less sweet – Use dark chocolate chips for the shell.
  • Make it extra salty – Add a pinch of flaky sea salt on top.
  • Make it peppermint-ish – Add crushed candy cane instead of M&Ms.
  • Lower sugar option – Skip M&Ms and use sugar-free chocolate and nuts.
  • Extra crunch – Add pretzels or chopped almonds instead of crackers.

FAQ

Does this really taste like Christmas crack?

Yes. The saltines and toffee recreate that classic sweet-salty crunch almost perfectly.

Can I use whole milk instead of 2%?

Absolutely. It will be slightly creamier and a bit higher in calories.

Do I have to make the chocolate shell?

No, but it adds a lot to the experience and helps the toppings stick.

Can I make this ahead of time?

Yes. Store the finished pint in the freezer and let it sit out for a few minutes before serving.

Can I use a different protein powder?

Vanilla works best, but unflavored or white chocolate protein also works well.
