Christmas Crack Protein Ice Cream

Ingredients
  

Ice Cream Base
  • 1 ½  cups 2% milk (360 mL)
  • 1 scoop vanilla protein powder (31 g)
  • 14 g sugar-free white chocolate pudding mix
  • 1 tsp vanilla extract
  • 1 tsp stevia or sweetener of choice, to taste
  • pinch of salt
Mix-Ins
  • 5 saltine crackers
  • 15 g toffee bits
Chocolate Shell
  • 21 g semi-sweet chocolate chips
  • ½  tsp coconut oil
Toppings
  • 6 red and green M&Ms (chopped or whole)
  • 2 g christmas sprinkles (½ tsp)
  • 2 g chopped white chocolate (about 4 white chocolate chips)

Method
 

  1. In a blender, combine all "Ice Cream Base" ingredients and blend until smooth.
  2. Pour the mixture into a Ninja Creami pint and freeze on a level surface for 24 hours.
  3. Remove from the freezer, rinse the pint under hot water for 1-2 minutes.
  4. Spin on Lite Ice Cream mode.
  5. Respin 1-2 times until creamy.
  6. Once your ice cream is spun, you can place your pint in the freezer while you prepare the chocolate shell.
  7. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave the mixture in 15-second intervals, stirring in between, until it’s completely melted and smooth.
  8. Pour the chocolate shell over the top of your Ninja Creami pint. Smooth it out, immediately sprinkle on the chopped M&Ms, Christmas sprinkles, and chopped white chocolate while the shell is still wet so everything sticks.
    Let the shell set for a minute or two, then enjoy!
