Ingredients
  

  • cup quick oats 33g
  • ¼ cup low-fat cottage cheese 56g
  • 1 egg
  • 10 g vanilla protein powder
  • ¾ tsp baking powder
  • 2 tsp stevia or sweetener of choice, to taste
  • ½ tsp vanilla extract
  • ½ tsp apple cider vinegar
  • 2 tbsp water
  • tsp salt

Method
 

  1. Add all ingredients to a blender and blend until smooth.
  2. Heat a non-stick pan over medium heat. Spray lightly with cooking spray if needed, pour in all of the batter and cook 2-3 minutes per side or until golden brown.
  3. Add your favorite toppings to the pancake and enjoy!
