Method
Ice Cream
- Add all of the Ice Cream Base ingredients to a blender and blend until smooth.
- Pour the mixture into your Ninja Creami pint and freeze for 24 hours on a level surface.
- Take the pint out of the freezer and run it under hot water for 1-2 minutes (all sides, including the bottom).
- Spin on Lite Ice Cream mode.
- Respin 1-2 times until smooth and creamy.
- Once smooth, create a well in the center of the pint (if one didn’t already form while spinning). Add your frozen blueberries into the center. Spin on Mix-In mode.
- Place your ice cream in the freezer while you prepare the toppings.
Toppings
- For the crust, crush two graham cracker sheets into a bowl and add the brown sugar substitute, maple syrup, cinnamon, and a pinch of salt. Mash everything together until it forms a crust. Be patient — it might look dry at first, but it will come together. If needed, add a few extra drops of maple syrup.
- In a microwave-safe dish, combine 15 g frozen blueberries and ⅛ tsp stevia. Microwave for 15 seconds, then mash with a fork until it forms a sauce-like consistency. This will be your ghost face “paint.”
- Take the pint out of the freezer. Gently press the graham cracker crust evenly across the top (I smoothed out the ice cream first to make it easier). Then, using a spoon, create a ghost face with the blueberry topping — two eyes and a mouth are classic, but you can get creative with different expressions.
- Now take some pictures and enjoy!
