Butter Pecan Protein Ice Cream

A smooth and creamy butter pecan protein ice cream made with vanilla protein powder, sugar-free pudding mix, and honey-roasted pecans. Easy to make in the Ninja Creami for a high-protein treat that tastes just like classic butter pecan ice cream!

Ingredients
  

Ice Cream Base
  • 1 ½ cups 2% milk (360 mL)
  • 1 scoop vanilla protein powder (31 g)
  • 7 g sugar-free vanilla pudding mix
  • 7 g sugar-free butterscotch pudding mix
  • 2 tsp butter extract
  • 1 tsp stevia or sweetener of choice, to taste
  • big pinch of salt
Mix-Ins
  • 3 tbsp chopped pecans (honey roasted or your preferred variety) (21 g)

Method
 

  1. In a blender, combine all "Ice Cream Base" ingredients and blend until smooth.
  2. Pour the blended mixture into a Ninja Creami pint and freeze on a level surface for 24 hours.
  3. Once frozen, remove the pint from the freezer and run it under hot water for 1-2 minutes. 
  4. Spin on Lite Ice Cream Mode.
  5. Respin 1-2 times until it reaches a smooth, creamy consistency.
  6. Create a well in the center (if one isn’t already there), then add the chopped pecans, reserving a few for the top. Spin on Mix-In mode.
  7. Top with any remaining pecans and enjoy!
