Cannoli Protein Ice Cream

This creamy cannoli protein ice cream combines the rich flavors of ricotta, vanilla, and chocolate chips for a high-protein take on the classic Italian dessert. Topped with crunchy cannoli chips, it’s the perfect balance of indulgence and nutrition!

Ingredients
  

Ice Cream Base
  • 1 ¼ cups 2% milk (300 mL)
  • 1 scoop vanilla protein powder (31 g)
  • ½ cup fat-free ricotta cheese
  • 14 g sugar-free cheesecake pudding mix
  • 1 tsp stevia or sweetener of choice, to taste
  • pinch of salt
Toppings
  • 14 g mini semi-sweet chocolate chips
  • 2 cannoli chips

Method
 

  1. Add all "Ice Cream Base" ingredients to a blender and blend until smooth.
  2. Pour your blended mixture into your Ninja Creami pint and freeze on a level surface for 24 hours.
  3. Once your base is frozen, remove it from the freezer and run the pint under hot water for 1-2 minutes (all sides, including the bottom). 
  4. Spin on Lite Ice Cream mode.
  5. Respin 1-2 more times until it reaches that perfect creamy consistency.
  6. Sprinkle on the mini chocolate chips, then add the cannoli chips and enjoy!
