Chocolate-Covered Strawberry Overnight Oats – a strawberry oat base topped with a creamy chocolate greek yogurt "frosting". This recipe not only captures the romance of a classic combo but introduces a cake-like texture that makes for a breakfast that can double as dessert.

Ingredients
  

OAT BASE
  • 40 g oats ( I use quick oats )
  • 1 scoop vanilla protein powder ( should be equivalent to a half serving of your protein powder )
  • 42 g non fat plain greek yogurt
  • 4 g sugar free vanilla pudding mix
  • 2 g sugar free strawberry jello mix (optional but adds flavor / color )
  • 1/2 cup hot water or milk of choice
  • 1/2 tsp baking powder
  • 3 strawberries ( chopped )
  • vanilla bean paste or extract
  • sweetener of choice
  • pinch of salt
CHOCOLATE "FROSTING"
  • 85 g non fat plain greek yogurt
  • 4 g sugar free chocolate pudding mix
  • 2 g cocoa
  • sweetener of choice

Method
 

STRAWBERRY OATS
  1. In your bowl, add everything in the OAT BASE and mix.
  2. Once combined, microwave for 30 - 40 secs!
  3. Now cover and refrigerate overnight!
CHOCOLATE "FROSTING" ( THE NEXT MORNING )
  1. Combine all ingredients in the CHOCOLATE "FROSTING".
  2. Then add the frosting on top of your strawberry oats and garnish with more strawberries if you're feeling fancy.
  3. And enjoy!
