Chunky Monkey Protein Ice Cream

This Chunky Monkey Protein Ice Cream is a high-protein, healthier take on the classic flavor! Made with a creamy banana-vanilla base, rich chocolate chunks, and crunchy walnuts, it’s the perfect sweet treat that’s easy to make in the Ninja Creami.

Ingredients
  

Ice Cream Base
  • 1 ½ cups 2% milk (360 mL)
  • 1 scoop vanilla protein powder (31 g)
  • 7 g sugar-free vanilla pudding mix
  • 7 g sugar-free banana cream pudding mix
  • 1 tsp vanilla extract
  • 1 tsp stevia or sweetener of choice, to taste
  • pinch of salt
Mix-Ins / Toppings
  • 15 g chopped semi-sweet chocolate (or chocolate chips)
  • 10 g walnuts

Method
 

  1. Add all "Ice Cream Base" ingredients to a blender and blend until smooth.
  2. Pour your blended mixture into your Ninja Creami pint and freeze on a level surface for 24 hours.
  3. Once your base is frozen, remove it from the freezer and run the pint under hot water for 1-2 minutes (all sides, including the bottom). 
  4. Spin on Lite Ice Cream mode.
  5. Respin 1-2 more times until it reaches that perfect creamy consistency.
  6. Create a well in the center (if one hasn’t already formed) and add your chopped chocolate and walnuts. Saving a little of each for the topping! Spin on Mix-In mode.
  7. Sprinkle the remaining chopped chocolate and walnuts over the top and enjoy!
