Peanut Butter Ritz Protein Ice Cream

This Peanut Butter Ritz Protein Ice Cream is sweet, salty, creamy, crunchy, and everything you could want in a healthy dessert. High-protein, low-calorie, and delicious!

Ingredients
  

Ice Cream Base
  • 1 ½ cups 2% milk (360 mL)
  • 1 scoop vanilla protein powder (31 g)
  • 14 g sugar-free butterscotch pudding mix
  • 32 g powdered peanut butter
  • 1 tsp stevia
  • ¼ tsp salt
Mix-Ins / Toppings
  • 6 Ritz crackers

Method
 

  1. Add all "Ice Cream Base" ingredients to a blender and blend until smooth.
  2. Pour the mixture into a Ninja Creami pint and freeze it on a level surface for 24 hours.
  3. Once frozen, take the pint out and rinse the outside under hot water for 1-2 minutes (including the bottom).
  4. Spin on Lite Ice Cream mode.
  5. Respin 1-2 times until you reach your desired consistency.
  6. If your ice cream doesn’t already have a well in the middle, use a spoon to create one. Add 4 Ritz crackers into the well and spin again on Mix-In mode
  7. Crumble the last 2 Ritz crackers on top for extra crunch. And enjoy!
