Ingredients
  

Dry Ingredients
  • 25 g oat flour
  • 25 g almond flour
  • 20 g vanilla protein powder
  • ¼ tsp baking powder
  • pinch of salt
Wet Ingredients
  • 20 g brown sugar substitute
  • 25 g unsweetened applesauce
  • 20 g non-fat plain greek yogurt
  • 1 tsp neutral oil or butter
  • ½ tsp vanilla extract
  • tsp almond extract

Method
 

  1. Preheat your oven to 300℉.
  2. In a small bowl, add all of the Dry Ingredients and stir until well mixed.
  3. In another bowl, add all of the Wet Ingredients and stir until smooth.
  4. Add the dry ingredients to the wet and stir until just combined.
  5. Stir in the chocolate chips and crushed peppermint, reserving a few to sprinkle on top before baking.
  6. Let the dough rest on the counter for 10-15 minutes.
  7. Transfer the dough to your skillet and spread it evenly. Top it off with the remaining chocolate chips/peppermint.
  8. Bake for 12-14 mins.
  9. Let the skillet cookie cool for a few minutes and enjoy!
