In a blender, combine the milk, almond milk, protein powder, sugar-free pistachio pudding mix, stevia, almond extract, and salt. Blend until completely smooth.
Pour the mixture into your Ninja Creami and freeze on a level surface for 24 hours.
After 24 hours, remove the pint from the freezer and run it under hot water for 1–2 minutes.
Spin the pint on Lite Ice Cream mode.
Respin 1-2 times until you reach your desired consistency.
Then add 7 grams of pistachios into the pint and spin one more time on the Mix-In setting.
Sprinkle the remaining 7 grams of pistachios on top of your ice cream and enjoy!
