Strawberry Crunch Ninja Creami

This high-protein Ninja Creami recipe transforms vanilla ice cream into a nostalgic strawberry shortcake-inspired treat with a smooth strawberry center and crunchy topping.

Ingredients
  

Ice Cream Base
  • cups 2% milk (414 mL)
  • 1 scoop vanilla protein powder (31 g)
  • 14 g sugar-free vanilla pudding mix
  • 2 tsp stevia or sweetener of choice, to taste
  • pinch of salt
Strawberry Center
  • ½ cup frozen strawberries (70 g)
  • ¼ cup milk of choice (60 mL)
  • ¼ tsp sugar-free strawberry JELLO mix
  • ½ tsp stevia or sweetener of choice, to taste
Strawberry Crunch Topping
  • 2 golden oreos, creme scraped out
  • 3 freeze-dried strawberries
  • tsp sugar-free strawberry JELLO mix

Method
 

ICE CREAM BASE
  1. To a blender add the "Ice Cream Base" ingredients and blend until smooth. 
  2. Pour the mixture into a Ninja Creami pint and freeze on a level surface for 24 hours.
  3. Once frozen, take the pint out and run it under hot water for 1-2 minutes. 
  4. Spin on Light Ice Cream mode.
  5. Re-spin 1-2 times until you reach your desired consistency.
  6. Use a spoon to create a well in the center of your ice cream. Place the pint back in the freezer while you prep the strawberry puree.
STRAWBERRY CENTER
  1. Blend the "Strawberry Center" ingredients until smooth. Pour the mixture into the well you created in your ice cream, smoothing out the top.
  2. If you can bear waiting, place the pint back in freezer for at least 30 minutes (or up to an hour for a firmer center).
STRAWBERRY CRUNCH TOPPING
  1. While the center sets, crush the Golden Oreos in a bowl. Crush the freeze-dried strawberries on top, then add in the Jello powder. Stir everything together.
  2. Once the ice cream has set, sprinkle your strawberry crunch topping over the top and enjoy!
