Ingredients
  

Ice Cream Base
  • 1 ¼ cups 2% milk (300 mL)
  • ½ cup fat-free cottage cheese (113 g)
  • 1 scoop vanilla protein powder (31 g)
  • 14 g sugar-free cheesecake pudding mix
  • 1 tsp espresso powder
  • 1 tsp vanilla extract
  • ½ tsp rum extract
  • 2 tsp stevia or sweetener of choice, to taste
  • pinch of salt
Mix-Ins
  • 2 ladyfingers
Toppings
  • cocoa powder

Method
 

  1. Add all "Ice Cream Base" ingredients to a blender and blend until smooth.
  2. Pour the mixture into a Ninja Creami pint and freeze on a level surface for 24 hours.
  3. Once frozen, remove the pint from the freezer and run it under hot water for 1-2 minutes on all sides, including the bottom.
  4. Spin on Lite Ice Cream mode.
  5. Respin it 1-2 times until you get a smooth, creamy texture.
  6. If there’s no hole in the center of your ice cream, create one. Then, add your two (broken up) ladyfingers into the well. Spin on Mix-In mode.
  7. Smooth over the top of your ice cream and dust with cocoa powder.
  8. Enjoy!
